Puffy pumpkin muffin for tea: how to prepare a delicious fall dessert

Pumpkin desserts are very tender, fluffy, and sweet. All this can be said about the next baking option - a pumpkin muffin. It is much easier to prepare than popular multi-component cakes. Besides, it is many times cheaper.

The idea of making a fluffy pumpkin muffin was published on the Instagram page of food blogger Yulia Senych (yuliia.senych). It's perfect for a family tea party.

Ingredients:

  • pumpkin puree - 325 g (hokkaido variety)
  • eggs - 2 pcs
  • butter - 90 g
  • sugar - 150 g
  • lemon and orange zest
  • orange juice - 50 ml
  • flour - 250 g
  • baking soda - 4 g
  • baking powder - 3 g
  • nutmeg/cloves/cinnamon - to taste
  • salt - 2 g
  • nuts/candied fruits - optional
  • a little butter to grease the mold

Ingredients for the cream:

  • cream cheese - 100 g
  • butter - 50 g
  • powdered sugar - 50 g

Method of preparation:

1. Pre-bake the pumpkin with 2-3 tbsp of water in foil in the oven.

2. After cooling, beat in a blender.

3. Mix the puree with eggs and sugar and pour in the oil.

4. Grate a little lemon and orange zest.

5. Squeeze the juice from the orange and add to the mass.

6. Mix the sifted flour, baking soda, baking powder, spices and salt separately.

7. Gradually add the flour to the pumpkin mixture. Add the dried fruit to the nuts. Knead the cake carefully so that it does not settle. Do it for several minutes.

8. Grease the mold with butter and pour the mixture into it.

9. Bake at 180 degrees for 55-60 minutes.

10. Check for doneness with a toothpick - it should be dry.

11. For the cream, beat the chilled cottage cheese and butter with powdered sugar.

12. Beat until thickened for 3-4 minutes.
