What happens if you do wash the meat

The so-called Maillard reaction between sugars and acids is triggered when meat comes into contact with water, both raw and frozen. Thanks to this reaction, meat at 110 C develops a brown crust on top, and juices and flavors are sealed inside. However, water begins to evaporate from a washed piece of meat at 100 C, which prevents the crust from forming!
