Cheesecake with Gingerbread flavor: what to make if you don't have time for cookies

You've never tasted a dessert like this before, but once you do, it's sure to become one of your favorites. Just imagine: a delicate and flavorful cheesecake with a gingerbread flavor.

A food blogger named ev.malinevska shared how to make this incredible dessert on Instagram. It will bring gastronomic and real aesthetic pleasure and give you a New Year's mood.

Ingredients for the base

  • Biscuits – 250-270 g
  • Butter – 90 grams
  • Cinnamon – 1 tsp. on request

Ingredients for the filling

  • Cottage cheese – 400 g
  • Sugar – 100 gr
  • Eggs – 2 pcs
  • Cream 33% – 150 ml
  • Vanilla extract
  • Corn starch – 1 tsp
  • Cinnamon – 1 tsp.
  • Ground ginger – ½ tsp
  • Nutmeg – ½ tsp.
  • Honey – 2 tbsp, optional

Method of preparation.

1. Blend the cookies until smooth. Add the melted butter and mix well.

2. Put it in the prepared baking dish. Align the sides of the cheesecake and the bottom.

3. For the filling, mix cottage cheese, sugar, and eggs in a bowl. Mix well until smooth.

4. Add vanilla extract and cream to the mixture. Blend until smooth. Finally, add the starch to the mixture and mix well.

5. Divide the filling into 2 equal parts. In the second part, add all the spices and honey as desired.

6. Pour the filling alternately onto the sand base. Finally, you can make patterns with a bamboo stick.

7. Bake for 45 minutes at 175-180°C. Leave the cheesecake to cool completely, preferably overnight.

8. Garnish with caramel and gingerbread.
