Winter salad with beets and carrots: how to prepare a delicious and healthy dish
In winter, the body usually lacks vitamins of various groups. Therefore, it is very important that vegetable salads are present in the human diet throughout the cold season.
Food blogger Tetiana Yushyna shared how to make a winter salad of beets and carrots on Instagram. It will turn out not only healthy but also very tasty.
Ingredients
- beetroot - 1 pc
- carrot - 1 pc
- onion - 1 pc
- sweet pepper - 1 pc
- pickled cucumbers - 2-3 pcs
- canned red beans - 1 can
- greens - 1 bunch
- garlic - 2-3 cloves
- salt - 1 tsp
- pepper
- apple cider vinegar - 1 tbsp
- oil - 2-3 tbsp
Method of preparation
1. Cut the beets and carrots into thin strips or grate them on a grater for Korean-style carrots.
3. Cut the onion, pepper and cucumber into strips too.
4. Fry the beets, carrots, peppers and onions one by one, with a minimum amount of oil and rather high heat. Fry the vegetables quickly, as they should remain a little al dente.
5. Transfer to a plate. Add cucumbers, beans, greens, and garlic.
6. Season with salt and pepper. Add vinegar and oil. Mix thoroughly and serve.
