As long as pumpkin season is in full swing, you shouldn't miss any opportunity to cook a number of dishes with it. Pumpkin is so versatile that it can be used in a first course, a side dish, a coffee drink, or even a dessert.

Food blogger Lisa Hlinska shared a recipe for mini pumpkin muffins on her Instagram. They are very easy to prepare and will appeal to absolutely everyone.

Ingredients for 10 pieces

  • butter - 150 g
  • sugar - 100 g
  • eggs - 2 pcs
  • flour - 250 g
  • baking powder - 10 g
  • orange zest - 1 pc
  • grated pumpkin - 200 g
  • any frozen berries - 50 g

Method of preparation

1. Beat softened butter until lightened and increased in volume.

2. Add orange zest and sugar and beat again.

3. Add eggs and mix.

4. Add flour and baking powder and mix again.

5. Add grated pumpkin and mix again.

6. Turn on the oven to 180C.

7. Add the berries to the dough and mix everything.

8. Pour the dough into the molds, filling them up to half.

9. Bake at 180 degrees for 25-30 minutes. Check for doneness with a toothpick.

10. Remove the finished muffins from the mold and sprinkle them with powdered sugar.
