Universal lemon curd instead of custard: how to cook

If you're tired of custard desserts, make this versatile lemon curd. It has a very pleasant fresh flavor with a slight sourness. You can simply eat it with a spoon or add it to various pastries as a filling.

The idea of making a universal lemon curd was published on the Instagram page of food blogger Valeria Demchuk(mrs.demenchuk). It is perfectly stored in a jar in the refrigerator.

Ingredients:

  • lemon juice - 65 g
  • zest of 1 lemon
  • milk - 125 g
  • sugar - 65 g
  • butter - 30 g
  • egg yolk - 2 pcs
  • corn starch - 20 g

Method of preparation:

1. Mix everything in a ladle and put on a small fire.

2. Bring to a boil.

3. Stir and cook for 3 minutes.

4. You can pass it through a sieve if the pieces of zest bother you, or leave it with them.

5. Cover with cling film.

6. Leave to cool completely.
