Pork head with horseradish

Pork head with horseradish is a well-known Cossack meat dish. To prepare it, you need to clean the head and boil it, adding a variety of vegetables and spices to the pot, for several hours. During this time, you have to prepare horseradish. To do this, grate the root on a fine grater, fry in vegetable oil, and add dried flour. After mixing thoroughly, poured broth over the mixture and add sour cream and warm vinegar mixed with salt and sugar. Bring the mixture to a boil and pour the resulting sauce over the pork head.

Solomakha

Solomakha is a dish made from buckwheat, wheat, or rye, which was used to make a liquid dough. It was poured into boiling water and brewed, stirring constantly. Garlic and oil or lard were added to the finished dish. It was considered one of the most common delicacy during Cossack campaigns.

Kapusnyak

There is an assumption that cabbage soup appeared in the diet of the Cossacks at the end of the Zaporizhzhia Sich's existence. This may be because researchers have not been able to find the original recipe for this dish. Still, there is a possibility that kapusnyak, like modern borscht, simply does not have an original recipe and each housewife had her own one.

Shcherba and teterya

Shchebra was the first dish that all Cossacks adored. It was made from fish soup, to which cooked liquid flour was added. A little later, this dish turned into teterya, because the fighters began to add pre-boiled millet porridge to it. The porridge was prepared in an interesting way too as during cooking, sour rye dough was added to it.

Meat dishes

Meat has always been in short supply among the Cossacks because they practically did not keep house. However, in those days, there were quite a few hares, bears, deer and other wild animals, which Cossacks hunted down and turned into delicious dinners.
