It is always very convenient to boil varenyky or dumplings for lunch as you can freeze some and cook them at any time. Custard dough will be perfect for the base - it is soft and very elastic.

The idea of making custard varenyky with cottage cheese was published on the Instagram page of food blogger Natalia with the nickname nata.cooking. The filling requires only three ingredients.

Ingredients for the dough:

  • flour - 300-500 g
  • eggs - 1 pc
  • boiling water - 150 ml
  • salt - 0.5 tsp
  • oil - 2-3 tbsp
  • a piece of butter for serving

Ingredients for the filling:

  • cottage cheese - 360-400 g
  • eggs - 1 pc
  • salt - 0.5 tsp

Method of preparation:

1. For the dough, sift flour and add the egg and salt.

2. Pour in oil and mix with a spoon or spatula.

3. Next, pour in boiling water and knead the dough. First, use a spoon while it is hot, and then knead with your hands for at least 5 minutes until it is smooth and elastic. Take less flour than indicated and gradually add more if necessary if the dough sticks to your hands.

4. Cover the dough with a towel or wrap it in plastic film and leave it to rest at room temperature for at least 30 minutes.

5. This choux pastry holds its shape perfectly, does not boil, does not crack when frozen, is tasty and very pleasant to work with.

6. Combine all the ingredients for the filling.

7. Divide the finished dough into 2 parts and roll out each part on a floured surface into a thin layer.

8. Cut out the circles, put the filling on top, pinch the edges and form varenyky. If desired, you can make beautiful curly edges.

9. Put the finished varenyky on a floured board and cover with a towel to make sure they rise a little.

10. When the water has boiled, add salt, stir, pour the varenyky in and stir again so that they do not stick together.

12. Cook them for 2 minutes and remove immediately. Frozen dumplings are boiled for 5 minutes.

13. Brush with butter and serve with fried onions or sour cream.
