Sweet choux pastry "valentines": what to cook for Valentine's Day
Valentine's Day is coming soon. This means that lovers will give each other small gifts and treat each other to themed desserts.
A food blogger with the nickname julia food blog ua showed on Instagram how to make choux pastry "valentines." The recipe turned out to be so simple that anyone can make it.
Ingredients for the custard dough
- Water – 250 ml
- Milk – 100 ml
- Sugar – 1 tbsp
- Butter – 120 gr
- Flour – 200 gr
- Salt – 1/3 tsp
- Eggs – 280-300 gr
Ingredients for craquelin
- Sugar – 120 gr
- Butter – 80 gr
- Flour – 100 gr
- Gel red dye
Ingredients for the cream
- Cream cheese – 350 gr
- Cream 33% – 300 ml
- Powdered sugar – 80 gr
- Vanilla sugar - ½ sachet
Ingredients for the filling
- Currant puree – 150 gr
- Sugar – 65 g
- Corn starch – 8 g
Method of preparation
1. Prepare the choux pastry. Pour water and milk into a frying pan. Add sugar and butter. Wait until active steam is formed.
2. Add flour and salt and quickly knead the dough with a spatula. Let it cool for 4-5 minutes.
3. Add the eggs in small portions. Watch the consistency, the finished dough should fall off the spatula in a lazy ribbon.
4. Place the dough hearts on a baking sheet with parchment. Bake in a preheated oven to 180 degrees for 27-30 minutes.
5. Prepare the craquelin. Combine the flour with the sugar. Add cold butter grated on a coarse grater. Rub everything with your hands until you have a ball of dough.
6. Put the dough on the parchment, put another piece of parchment on top, and use a rolling pin to stretch the dough as if to make a thin layer of it.
7. Put it in the refrigerator for 1 hour.
8. Prepare the cream. Combine all the ingredients and beat until creamy.
9. Prepare the filling. Mix sugar with starch and add to the mashed potatoes. Cook the filling for 30 seconds after boiling.
10. Assemble the cakes as shown in the photo.
