Not black sausage alone: what unique bread is made in Khmelnytsky region. An authentic recipe

"Bread is the head of everything" is the most famous Ukrainian proverb. And it is true. Most families in Ukraine do not sit down to dinner without good, fragrant bread.

Journalist Kostyantyn Grubych recently traveled to the Khmelnytsky region to visit the production of the legendary black sausage. He also visited a house where 4.5 kg of rye-wheat bread has been made since ancient times. The production of this bread is put on a wide scale and there are huge queues for it every day. It is lean, so it is often bought for monasteries. Hrubych explained how these flour giants are made in Khmelnytskyi on his YouTube channel.

Ingredients

  • High-grade wheat flour - 7 kg
  • Rye flour - 3 kg
  • Sourdough starter

Method of preparation

1.Pour the sourdough starter into the dough mixer.

2. Add the sifted flour.

3. Knead the dough thoroughly, adding water as needed.

4. Separate a piece of dough weighing approximately 4.5 kg from the main mass.

5. Put it on a greased surface and roll it out.

6. Put the dough in a deep bowl, cover with a towel and leave it in a warm place to rise.

7. In a separate bowl, mix the rye flour with any fine cereal.

8. Sprinkle the resulting mixture on the oven spatula and spread the finished dough on top.

9. Sprinkle the dough with water.

10. Shape the dough into a flower shape with a knife or your finger.

11. Put the dough in the oven and bake until done.
