Lezhni: how to cook an authentic Ukrainian dish made from corn flour
Any Ukrainian dish prepared according to an authentic recipe has its own character, mood, and soul. It is full of love, which only emphasizes the taste and allows you to fully enjoy it. Therefore, you should be able to cook authentic Ukrainian dishes in this way, because they will definitely find their connoisseurs.
Journalist Kostyantyn Grubych shared on Facebook how to cook lezhni, an authentic Ukrainian dish made from corn flour. He learned this recipe from residents of the small village of Kolibaivka, near Kamianets-Podilskyi.
Ingredients for the dough
- Corn flour - 500 g
- Water - 250 ml
- Corn starch - 1 tbsp
- Salt - 1 tsp.
Ingredients for the filling
- Potatoes + cottage cheese
- Sauerkraut stew
- Cottage cheese
Ingredients for serving
- Mushrooms
- Bacon cracklings
Method of preparation
1. Pour water into a saucepan, add salt and bring to a boil.
2. Add corn flour and starch, cook for 1 minute, stirring constantly.
3. Let the dough cool completely.
4. Form the lezhni, adding any filling to taste.
5. To make the dough better molded and not stick to your hands, use additional corn flour.
6. According to an authentic recipe, the filling for lezhni should be crushed boiled potatoes with cottage cheese, stewed sauerkraut, or just cottage cheese.
7. Form the lezhni and put them in a hot frying pan with vegetable oil. Fry until golden brown.
8. You can also make lezhni without any filling. In this case, just form a flatbread from corn flour and fry it in a pan until it's ready.
