Light lentil soup for lunch: the broth will be rich, but not greasy
Soup is a classic dish for a hearty lunch. The main thing is to choose the right ingredients so that the broth is rich but not too fatty. Chicken is a great choice, and lentils will be much more dietary instead of pasta or buckwheat.
The idea of preparing a dietary lentil soup for lunch was published on the Instagram page of food blogger Yulia Symonchuk (cook julija simonchuk). It contains a lot of vegetables and herbs.
Ingredients:
- chicken thigh fillet - 350-400 g
- potatoes - 3-4 pcs.
- red lentils - 1 cup
- onion - 1 pc.
- carrot - 1 pc.
- garlic - 1 clove
- tomato paste - 2 tbsp
- salt, pepper - to taste
- smoked paprika - to taste
- herbs
- butter / oil - for frying
Method of preparation:
1. Fry onions and carrots, add garlic, thigh fillets.
2. At this point add smoked paprika.
3. Fry a little and add the washed red lentils.
4. Add the remaining potatoes, cover with water and cook until the potatoes and lentils are tender, making sure to remove the noise occasionally.
5. Add bay leaf, allspice, and tomato paste at the end.
6. Cook for another 1-2 minutes, add herbs and remove from heat.
7. Let stand for a while.
