Light and healthy beetroot and prune salad: how to prepare
After a hearty meal, you always want light and refreshing food. Beets are perfect for this purpose. But instead of classic salads with mayonnaise, you can make a dish with prunes, feta, and a light oil-based sauce.
The idea of making a light beet salad was published on the Instagram page of food blogger Victoria Korolivska (korolivska1). You only need a few simple ingredients.
Ingredients:
- beets - 2-3 pieces (medium size)
- feta - 100 g
- prunes - 6-8 pcs.
- mustard (ordinary) - 1 tsp.
- mustard in grains - 1 tsp.
- honey - 1 tsp
- lemon juice - 1 tbsp
- oil (olive or sunflower) - 2 tbsp
- salt - to taste
- herbs (dill, parsley, or other favorite) - for garnishing
Method of preparation:
1. Bake the beets in foil.
2. Peel, and cut into thin slices.
3. Place an even layer on a plate.
4. Add a little salt.
5. Season with the sauce: two types of mustard, honey, lemon, and oil and whisk everything.
6. Put the crumbled feta on top.
7. Add the prunes cut into pieces.
8. Sprinkle with your favorite herbs on top.
