Juicy seasonal salad with pumpkin and feta: how to prepare a light autumn appetizer

One of the most popular fall appetizers is a salad with baked pumpkin. The dish is very light and juicy. The vegetable adds a pleasant sweetish flavor.

The idea of preparing a juicy seasonal salad with pumpkin and feta was published on the Instagram page of food blogger Olena Karpyuk (alionakarpiuk). The salad should be seasoned with a delicious honey and soy sauce dressing.

Method of preparation:

  • 100 g feta cheese
  • 200 g of pumpkin
  • half an orange
  • 3 cloves of garlic
  • mixed salad
  • 2-3 tbsp. olive oil

Method of preparation:

1. Drizzle the pumpkin with olive oil.

2. Add the garlic and place in the oven.

3. Bake the pumpkin in a preheated 200-degree oven until it is tender.

4. Put the greens on a plate.

5. Add the orange, roasted pumpkin, and feta slices.

6. Drizzle with the sauce.

For the sauce, mix:

  • 1 tsp. Dijon mustard
  • 1 tbsp. olive oil
  • 1 tsp of honey
  • 1 tbsp of soy sauce
