How to prepare authentic Lviv cheesecake with dried fruits
Lviv syrnyk or cheesecake is a true classic among desserts, especially popular in Western Ukraine. Every family makes it according to their own recipe, taking into account the preferences of those who will eat it. However, the classic ones are timeless, so authenticity is valued the most.
Food blogger Valentyna Kushch shared such a recipe on Instagram. She explained how to make a classic Lviv cheesecake with dried fruit and chocolate glaze.
Ingredients
- cottage cheese - 700 g
- sugar - 150 g
- baking powder - 1 tsp
- corn starch - 20 g
- vanilla
- eggs - 4 pcs
- soft butter - 100 g
- raisins and dried fruits to taste - 100 g
Ingredients for the glaze
- chocolate - 150 g
- cream - 30 g
- butter - 10 g
Method of preparation
1. Soak dried fruits in boiling water and leave for 10 minutes.
2. Grind the cottage cheese through a sieve or pass it through a meat grinder.
3. Add soft butter, baking powder, starch, sugar, vanilla, and egg yolks to the cottage cheese. Mix well. Add zest too, if you want.
4. Drain the dried fruit and add to the cottage cheese mixture. Mix well.
5. Add the whipped egg white in parts, mixing gently each time.
6. Put in a baking dish covered with parchment and bake at 180 degrees for 1 hour and 20 minutes until golden brown.
7. Let cool completely.
8. Prepare the glaze. Melt all the ingredients in a water bath and pour over the cold cheesecake.
