The bubbles in the sparkling water fill the batter, expanding during cooking to make the pancakes soft. The flavor of the dish will also become lighter and more intense. Carbonated water retains its properties for a long time, so when it comes into contact with heat, small bubbles form. Thus, the dough is naturally aerated.
