How to cook perfect scrambled eggs without dry edges: the chef reveals the secret

Tory Avery, a chef known for making the best scrambled eggs, has revealed the secret to making this dish perfect, Express reports. According to him, the main advice is to choose the right eggs for this dish. The best choice would be homemade eggs, which have more nutrients.

Fresh home-made eggs have a creamier and more flavorful taste and will improve the consistency of your scrambled eggs as the whites will become firmer, which can lead to puffiness of the eggs during cooking.

How to cook the perfect scrambled eggs

Ingredients:

  • Four large eggs
  • Two tablespoons of whole milk
  • Butter (alternatively, you can use olive oil or avocado oil)
  • Grated cheese (optional)
  • Salt and pepper.

If you want to add cheese to this dish, be sure to prepare it in advance or buy packaged grated cheese so you can add it quickly so it doesn't burn.

Method of preparation:

1. First, put the frying pan on the stove and put it over medium heat. Leave the pan to heat up.

2. Meanwhile, prepare the eggs. Crack them into a bowl, add the milk, and then season with salt and pepper. Don't forget to add a little liquid as it helps to add fluffiness to the scrambled eggs.

3. Use a fork to quickly mix the eggs for 30-60 seconds. Make sure the eggs are properly mixed before cooking them. Then add the butter or oil to the pan.

4. Pour the egg mixture into the pan and make sure the heat is no higher than medium. If the pan gets too hot, the eggs may become dry or rubbery.

5. Once the eggs are in the pan, use a spatula to pull the cooked outer edges of the egg mixture into the center of the pan. If you are adding cheese, do so now to give it time to melt into the eggs.

6. Move the spatula around the pan, but make sure to keep pulling the browned edges into the center. The liquid parts of the egg will stay on the outside until it's done, so everything will cook evenly.

7. When the eggs are almost done, turn off the heat and they will continue to fry. Serve immediately. Your eggs will be moist and fluffy without dried edges.
