Homemade potato sausage for the Christmas table: a simple recipe from Volodymyr Yaroslavskyi

Almost everyone associates homemade sausage with the Christmas and New Year holidays. And it can be made not only from meat but also from potatoes, adding bacon and underbelly.

Volodymyr Yaroslavskyi shared a delicious and satisfying potato sausage recipe on Instagram.

Ingredients:

  • 1 kg of peeled potatoes
  • 100 g of onions
  • 350 g of meat underbelly
  • 100 g of smoked bacon
  • 300 g of onions for frying
  • 100 g of cream (30%)
  • spices for potatoes
  • 2 meters of intestines

Method of preparation:

1. Tenderize the underbelly, chop finely, and fry in a pan. For a richer flavor, add smoked bacon and chopped onions almost immediately. Fry until the onions are lightly browned. You can use more meat instead of bacon.

2. Raw potatoes and 1 fresh onion can be grated, passed through a meat grinder, or even blended. But be careful not to make a smoothie.

3. Immediately add cream (or homemade sour cream) to the potatoes, as well as a packet of seasoning: salt, dry garlic, paprika, turmeric, marjoram, basil, dill, black pepper, chili, and cumin. Mix everything thoroughly and fill the intestine. Fill no more than halfway so that the sausage does not burst during cooking!

4. Tie the edges of the intestines in knots and pierce the sausage in several places with a toothpick. Add a little water and bake in the oven at 175-180 C, on the sides until golden brown (about 40 minutes in total).

It will be delicious both hot and cold
