Exquisite Palermo salad with mushrooms and jamon: a perfect autumn dish for a festive table

Palermo is a delicious salad that has a truly autumnal flavor. It is based on fried mushrooms, as well as lots of herbs and vegetables. The dressing is quite light, without the addition of sour cream and mayonnaise, so it does not weigh down the herbs.

The idea of making Palermo salad with mushrooms was published on the Instagram page of food blogger Anna with the nickname ann.food. It is not only delicious, but also very beautiful.

Ingredients:

  • mushrooms - 300 g
  • arugula - 80 g
  • cherry tomatoes - 12 pcs.
  • onion - 1 pc.
  • jamon - 70 g
  • cheese - 50 g

Ingredients for the dressing:

  • olive oil
  • Dijon mustard - 1 tsp.
  • balsamic vinegar

Method of preparation:

1. Chop the mushrooms and fry until all the liquid is rendered.

2. Salt and add the onion, cut into half rings.

3. Fry until the onions are semi-tender.

4. Put the mushrooms and onions first, then add the washed arugula.

5. Cut the cherry into halves and add to the salad.

6. Cut the jamon in half and twist or slice and place randomly.

7. For the dressing, mix Dijon mustard, olive oil and balsamic vinegar.

8. Drizzle with dressing and sprinkle generously with cheese.
