Delicious cocoa pancakes with cherries

Ingredients:
- eggs - 2 pcs
- kefir - 250 ml
- sugar - 2-3 tbsp
- vanilla sugar - 1 tsp
- salt - 1/3 tsp
- flour - 170 g
- cocoa powder - 2 tbsp
- baking soda - 1/2 tsp
- boiling water - 200 ml
- baking powder - 1 tsp
- vegetable oil - 2 tbsp
- cherries - 300 g
- corn starch - 2 tbsp
- powdered sugar - 2-3 tbsp
Method of preparation:
1. In a deep bowl, beat eggs with sugar, vanilla sugar, and salt until smooth.
2. Add room temperature kefir and mix thoroughly.
3. Sift flour with cocoa and add baking soda and baking powder.
4. Mix well to avoid lumps.
5. Pour in boiling water while continuing to stir the batter until smooth.
6. Add vegetable oil and mix well again.
7. Heat a frying pan over medium heat and fry the pancakes on both sides until cooked.
8. For the confit, mix cherries, sugar and starch in a saucepan.
9. Put on medium heat and thicken the mass. Leave it to cool.
10. Wrap the filling in pancakes.
11. If desired, put them in a baking dish, sprinkle with sugar, and add slices of butter on top.
12. Bake at 180 degrees for 10-15 minutes.
