Delicate airy yogurt pie: how to make delicious pastries
Traditional pie recipes call for a thick mixture of eggs, sugar, flour, and butter, but baked goods can be much more airy if you replace the butter with yogurt.
The natural acidity of yogurt interacts with the baking soda to help the baked goods rise and add moisture and tenderness to the texture. The author of the cookbook Hattie Ellis shared a simple recipe for such a pie, OBOZ.UA reports.
Ingredients:
- Three eggs
- 125 g of full-fat Greek yogurt
- 120 ml of sunflower or other neutral flavored oil, plus an additional amount for greasing
- 180 g of icing sugar plus extra for glazing
- 180 g of plain flour
- Two teaspoons of baking powder
- A pinch of fine salt
- One lime, lemon or orange, finely grated zest and juice, plus extra zest for garnish
- Fresh berries to serve.
Method of preparation:
1. Preheat the oven to 190C/170C. Then grease the walls of a 23 cm round baking dish and line the base with baking paper.
2. Take a large bowl and add the eggs, yogurt and sunflower oil, then stir to combine. Add the remaining ingredients, except for the lime juice (or lemon or orange), and whisk together.
3. Now place the mixture in the prepared pan and bake in the preheated oven for about 30 minutes or until a skewer inserted in the center comes out dry.
4. Prepare the glaze in advance. Mix the lime juice with an equal volume of powdered sugar (for example, two tablespoons of juice with two tablespoons of sugar) and set aside to dissolve.
5. Sprinkle with zest to brighten the top of the cake. Leave the cake to cool in the mold for 10 minutes, then turn it out onto a wire rack.
6. While the cake is still warm, brush the top with the lime glaze and let it cool. Serve the pie in slices, sprinkling with fresh berries at the end.
