Better than charlotte: how to make a delicious shortcrust apple pie
Instead of classic charlotte, you can make an apple pie on shortcrust pastry. The crispy base goes well with the juicy filling. And you will cope with this dessert very quickly.

Ingredients for shortcrust pastry:
- butter (margarine) – 200 g
- sugar – 65 g (3-4 tbsp)
- salt – a pinch
- baking powder – 2 tsp.
- eggs – 2 pcs.
- flour – 400 g
Method of preparation:
1. Knead the dough.
2. Divide into 2 parts: a larger and a smaller one.
3. Put both parts in the freezer.
Ingredients for the apple filling:
- peeled apples – 800 g (cut into slices)
- sugar – 4-5 tbsp
- cinnamon – 1 tsp.
- cold water – 100 ml.
Method of preparation:
1. Stew the ingredients for the filling.
2. If the apples are very juicy, pass them through a sieve to drain the excess juice.
Ingredients for the cream:
- milk – 800 ml.
- sugar – 200 g (more is possible)
- eggs – 3 pcs.
- corn starch – 100 g
- vanilla sugar – 2 packs
1. Brew all this, stirring, and add 80 g of butter at the end.
2. Mix everything again, and set aside.
3. Cover the mold with parchment.
4. Grate most of the dough.
5. Press down a little and form the sides.
6. If desired, add 1 tbsp of semolina.
7. Put the apple filling on the dough.
8. Warm custard on the apples, spread well
9. Top with a smaller piece of dough.
10. Sprinkle with sesame seeds if desired.
11. Bake at 180 degrees for 40-50 minutes.
12. It is best to use a wooden stick – it should be dry.
13. Cut after it has cooled completely.
