Airy cheesecake without dough: frozen cherries are suitable for the filling

Cheesecake is a delicious dessert for a family tea party. To make it, you will need ordinary biscuits and frozen cherries. Such simple ingredients will make a truly delicious treat.

Food blogger Anastasia Redko (tsarlova n) shared her recipe for a delicate cheesecake with cherries on Instagram. Everyone can handle this dessert.

Ingredients for the cookie layer:

  • coffee biscuits - 250 g + 75 g oreos
  • melted butter - 130 g

Ingredients for the base:

  • cottage cheese 9% - 350 g
  • sour cream 20% - 350 g
  • Philadelphia cheese or any cream cheese - 175 g
  • eggs - 3 pcs.
  • sugar - 150 g
  • vanilla sugar - 2 tsp.

Ingredients for cherry sauce:

  • frozen cherries - 400 g
  • sugar - 4-5 tbsp
  • cornstarch - 1.5 tbsp
  • water - 2/3 cup

Method of preparation:

1. Beat the cookies in a blender into crumbs, add the melted butter. Stir.

2. Put the crumbs on the bottom of the mold (21 cm in diameter), forming the sides. It is convenient to do this with a glass.

3. Put in the oven and bake for 10 minutes at 180 degrees.

4. Using an immersion blender, beat the cottage cheese and cream cheese.

5. Add sugar, eggs, and vanilla sugar and combine with a mixer. The texture should be smooth and homogeneous.

6. Pour the cheese mixture into the baked cookie base. Put a tray of water in the oven and bake the cheesecake at 160 degrees for about 50 minutes.

7. After baking, the cheesecake should wobble, do not bring it to a state where it is dense, then it will not be tender.

8. For the sauce, mix the cherries, water, sugar - bring to a boil, gradually add starch to make the liquid slightly thick. It is important not to make it too thick, it should drip off the cheesecake when sliced.

9. After baking, let the cheesecake stand in the oven for about 15 minutes. Then take it out and cool to room temperature, add the sauce at room temperature on top, and then refrigerate overnight (or at least 5 hours).
