A simple recipe for mini cakes with only 5 ingredients: the taste will surprise you

Ingredients
- Flour – 300 g
- Salted butter – 150 g
- Lemon curd (homemade or ready-made)
- Egg whites – 2 pcs.
- Powdered sugar – 100 g
Method of preparation
1. Combine the butter with the flour in a deep bowl. Rub into crumbs.
2. Add water one tablespoon at a time and knead the shortbread dough. Wrap in plastic wrap and refrigerate for 30 minutes.
3. Roll out the dough to a thickness of ½ cm and place it in a bun or muffin tin. Put it in the refrigerator for 10-15 minutes.
4. Prick the dough with a fork and bake for 15-18 minutes until golden brown.
5. Put 1 tsp of lemon curd in each mold, smooth, and bake for 5 minutes to dissolve the curd.
6. Bring a pot of water to a boil. Place the egg whites and sugar in a heatproof bowl over the pot of water and heat to 70 degrees. Whisk the eggs and sugar constantly as they heat up. If you don't have a food thermometer, heat them until the sugar is completely dissolved and free of grains.
7. Once heated, remove the eggs and sugar from the heat and beat with a mixer for 10-15 minutes until the mixture has cooled to room temperature.
8. Spread the meringue on the cake and give it a nice look using a kitchen burner.
