Banana desserts have always been on the top confectionery list. The fruit is especially delicious when combined with cottage cheese. That's why this tandem is the perfect base for a cheesecake. You don't even have to bake it, because ordinary cookies are used instead of dough. The mass hardens well in the refrigerator.

Ingredients for the base:

  • chocolate shortbread cookies - 110 g
  • butter - 60 g

Ingredients for the white layer:

  • bananas - 2 pcs
  • 33% cream - 200 ml
  • gelatin - 10g + 50 ml of cold water
  • lemon juice - 25 ml (2 tbsp)
  • cream cheese - 400g
  • powdered sugar - 100 gr

Ingredients for jelly layer:

  • gelatin - 10 g + 50 ml of cold water
  • water - 200 ml
  • lemon juice - 25 ml (2 tbsp)
  • sugar - 60 g
  • banana - 2 pcs.

1. Grind the cookies to a crumb in a blender, add the melted butter over a fire or in the microwave and mix until smooth. Cover a baking dish with a split ring with parchment. Pour the cookies into the mold and form the base. Put in the refrigerator for 30 minutes.

2. Pour gelatin with water and let it swell. Put the bananas, cream, lemon juice in a blender and beat for 1 minute until smooth.

3. Put the cream cheese and powdered sugar in a bowl and beat with a mixer for 1 minute. Add the banana mass from the blender to the cottage cheese and beat with a mixer until smooth.

4. Melt the gelatin in a water bath or microwave. Pour a thin stream into the white mass and mix at the same time.

5. Put the white filling into the mold on the base and level it. Put it in the refrigerator until it hardens.

6. Pour gelatin with water and let it swell. Pour water into a saucepan, add lemon juice and sugar, put it on the fire, heat it, but do not boil it. Add the swollen gelatin and stir until it dissolves. Let it cool down.

7. Cut bananas 1 cm high, pour 1 tbsp of lemon juice over them. Put them in the mold, close to each other. Pour half of the jelly with a spoon so that the bananas do not rise, put in the refrigerator until it hardens. When this layer has hardened, you can pour in the remaining jelly, again with a spoon. Leave it until it hardens completely. In the morning, you can already enjoy the taste of banana cheesecake.
