- chicken – 2 kg
- water – 3 liters
- salt – 3 tbsp
- sugar – 1 tbsp
- garlic – 3 cloves
- smoked paprika – 1 tsp
- ground pepper – 0.5 tsp

1. Wash the chicken, cut off excess fat and sebaceous glands.
2. For the salt solution, add salt, sugar, garlic, paprika, and pepper to a saucepan with water and mix well until the salt is completely dissolved.

3. Make punctures in the meat with a toothpick or needle and place the chicken in the brine. Cover the pot and leave it in the refrigerator overnight.
4. For the marinade, mix 1 tbsp. of honey mustard, 2 cloves grated garlic, 2 tbsp. of soy sauce, remove the zest from the orange, squeeze the juice from half an orange, and add to the marinade, add the juice of half a lemon, 0.5 tsp salt, and 1 tsp lemon pepper.

5. Stir until smooth. Take the chicken out of the brine, dry it with a paper towel, and rub it with the orange marinade on all sides, leave it to marinate for an hour. Reserve the rest of the sauce.
6. Then stuff the middle with orange slices, lemon slices, and rosemary sprigs. Tie the legs and tuck the wings under the back.
