Light salad with vegetables and quinoa

Ingredients:
- 70 g of quinoa (dry)
- 1 avocado
- 1 tomato
- 0.5 bell pepper
- 1 cucumber
- 0.5 red onion
- parsley/cilantro
- salt, pepper
- lemon juice (to taste)
- 2-3 tbsp. olive oil
Method of preparation:
1. Pre-boil and cool quinoa. Put it in a bowl.
