Ingredients:

  • fatty cottage cheese - 600 g
  • sugar - 80 g
  • eggs - 2 pcs
  • sour cream 30% - 50 g
  • butter - 70 g
  • vanilla sugar - 1 sachet
  • corn starch - 1 tbsp
  • raisins - 1 handful
  • zest - 1 lemon (optional)

Ingredients for the glaze:

  • butter - 70 g
  • sour cream - 60 g
  • cocoa - 1.5 tbsp
  • sugar - 2 tbsp.

1. Add sugar, sour cream, and vanilla sugar to the bowl with the cottage cheese and beat thoroughly with a blender (if you don't have a blender, then grind the cottage cheese through a sieve first).

2. Then add the melted (no longer hot) butter, starch, and lemon zest and mix well with a blender.

3. Add the eggs and beat well again with a blender until smooth.

4. Now add the raisins, previously steamed with boiling water, and mix gently with a spatula.

5. Grease a baking dish with butter and cover with parchment.

6. Put the curd mass into the mold, level it, and bake at 170 degrees for 40-50 minutes.

7. Let the finished cheesecake cool in the mold, then put it in the refrigerator for 4-5 hours.

8. For the glaze, put all the ingredients in a saucepan and stir over low heat until smooth.

9. Cook over low heat for 4 minutes.

10. Take the cheesecake out of the refrigerator, remove it from the mold, and remove the parchment. Pour the glaze over the cheesecake, brushing it on all sides.

11. Leave the cheesecake in the refrigerator for half an hour.
