Method of preparation:

1. Take the eggs chilled. Carefully separate the whites from the yolks. Add half a portion of sugar to the yolks.

2. Thoroughly beat the yolks with sugar until white. Beat the whites with the remaining sugar until a fluffy, stiff foam is obtained.

3. Add a third of the egg whites to the yolks, and mix with a spatula. Sift the flour several times with the cocoa. Pour the flour into the beaten yolks. Mix thoroughly until smooth.
