Kyiv cake in a simple way: the idea was shared by a famous chef

Kyiv cake is the hallmark of the Ukrainian capital. This dessert is known all over the world. But despite the special cooking technology, there is a variant that you can make even at home.
The idea of making a simple version of the Kyiv cake was shared by the famous Ukrainian chef Tetiana Lytvynova (tanita_litvinova) on Instagram. The cake is very crispy.
A simple recipe for Kyiv cake

Ingredients:
- protein - 240 g (about 7 eggs)
- sugar - 330 g
- hazelnuts - 170 mg (roasted and chopped)
Ingredients for the cream:
- syrup (sugar 170 g, water 80 g)
- egg yolks - 160 g
- butter - 320 g
- cocoa - 2 tbsp.
Ingredients for the decoration:
- 180 hazelnuts and candurin
Method of preparation:
1. Whip the whites into a foam, gradually adding sugar, and beat until a stable meringue consistency.

2. Add the chopped hazelnuts and mix gently. Divide into 2 cakes in a split mold. Bake for an hour at 140 degrees.

3. Let cool and remove from the mold.
4. For the cream, boil the syrup at 113 degrees. Check for readiness.

5. Whisk the egg yolks at room temperature until white and add a thin stream to whip into a fluffy foam.

6. Spread 1/3 of the cream on the first layer and sprinkle a handful of hazelnuts between the layers.
7. Add cocoa to the rest of the cream and mix thoroughly.

8. Spread the cream on the top and sides of the cake.

9. Put to stabilize in the refrigerator for 3-4 hours.
10. Garnish with whole nuts, sprinkled with candurine and chopped hazelnuts on the sides.
