Meatballs are a great addition to porridge or pasta. And they are much easier to prepare than stuffed cabbage rolls or even cutlets. And to make the minced meat juicy and soft, add seasonal pumpkin.

Ingredients:

  • 300-400 g of pumpkin
  • 600-800 g of minced meat (veal)
  • 1 egg
  • 1 onion
  • 1 clove of garlic
  • salt and pepper
  • parsley or dill

  • 1 onion
  • 1 carrot
  • 600-800 g of grated tomatoes (or dilute tomato paste in water)
  • 2-3 tbsp of sour cream
  • salt, pepper, a pinch of sugar, bay leaf

1. Grate the pumpkin on a coarse grater.

2. Grind onion and garlic in a blender or meat grinder.

3. Chop the greens.

4. Mix all the vegetables with the minced meat.

5. Add the egg, salt and pepper.

6. For the sauce, cut the onion into cubes, and grate the carrots.

7. Heat a little oil in a deep frying pan.

8. Fry onions, and carrots, add tomato, sour cream, salt, pepper, sugar, and bay leaf.

9. Simmer for 10 minutes.

10. With wet hands, form meatballs from the minced meat, and put in a baking dish.

11. Pour over the sauce, and bake at 200 degrees for 40-45 minutes.
