How to cook homemade pork balyk: you need special salt

Balyk is a sandwich meat that needs to be salted before cooking. This will make it very juicy. And if you used to buy balyk in a store, you can now make it at home.

The idea of making homemade balyk was published on the Instagram page of food blogger Anastasiia with the nickname nastya_food_baglay. In addition to regular salt, you will also need nitrate salt.

Ingredients:

  • salt can be used and coarse sea salt - 1 tsp.
  • pork chop (middle) - 500 g
  • ordinary and nitrite salt - 0.5 tsp (to make 1 tsp)
  • smoked paprika
  • ordinary or American mustard

1. Wash the meat, dry it, and rub it evenly with salt, preferably with your hands a little at a time to rub each area.

2. Wrap in cling film and refrigerate for three days. If there is moisture, pour it out.

3. After three days, take out the steak, rub it with mustard and smoked paprika, and optionally grease the top with Dijon mustard or other herbs.

4. Put the steak on the parchment, and pinch the edges to make it look like a boat.

5. Put in a preheated oven and bake at 80 degrees, then for 1 hour at 100 degrees.
