How long do you need to beat eggs for a sponge cake to make it fluffy: we tell you

Eggs are an essential component of a sponge cake. The quality of the baking depends on how well they are beaten. Therefore, it must be done strictly in time.

The idea of making a perfect fluffy sponge cake was published on the Instagram page of a food blogger with the nickname mrs.demenchuk. The recipe states that eggs should be beaten at the maximum speed of the mixer for 10 minutes.

Ingredients:

  • flour – 125 g
  • corn starch – 25 g
  • eggs – 5 pcs.
  • sugar – 150 g
  • salt – a pinch

Method of preparation:

1. Turn the oven to 180 degrees.

2. Sift the flour, add the starch and mix. Separately, beat the eggs with salt and sugar at the maximum speed of the mixer until fluffy white for 10 minutes.

3. Sift half of the flour and starch into the beaten eggs again and mix thoroughly with a spatula from the bottom up so that all the flour is mixed with the egg mass. Add the rest of the flour and mix again until smooth.

4. Cover the bottom of the mold with parchment, do not grease it, and pour the dough, smoothing it out. Cover with foil so that the sponge cake is baked evenly and put in the oven for 30 minutes. After 30 minutes, open the oven, remove the foil, and bake for about 20 minutes until done. Check your oven to make sure you don't overbake the sponge cake. You can check the readiness with a skewer or a match.

5. Immediately after removing the finished sponge cake from the oven, carefully run a knife between the sides of the mold and the sponge cake, remove the mold and parchment, and leave it to cool completely.

6. After that, wrap it in cling film and put it in the refrigerator for 6 hours, or preferably overnight.
