Korean carrots can be eaten as a standalone salad or added to other dishes. This appetizer will always be a win-win on the festive table. Therefore, it is worth preparing carrots for the winter to make everything from fresh vegetables, and then just open the jar and not waste time cooking.

The idea of cooking juicy Korean carrots for the winter was published on the Instagram page of food blogger Maria Khrypko (masha.hrypko). Tomatoes and peppers add a special flavor.

Ingredients:

  • 4 kg of carrots
  • 2.5 kg of tomatoes
  • 1 kg of pepper
  • 350 g of oil
  • 300 g of sugar
  • 300 g of vinegar
  • 4 tbsp of salt
  • 200 g of garlic

Method of preparation:

1. Grate the carrots on a special grater.

2. Grind the tomatoes and pepper in a blender.

3. Mix carrots, tomatoes, pepper, oil, sugar, vinegar, and salt.

4. Cook for an hour.

5. Add garlic at the end and cook for 10 minutes.

6. Put in dry, clean jars and sterilize for 20 minutes.
