1. Separate the whites from the yolks. We don't need the yolks in this recipe.

2. Add salt to the whites and beat until frothy (about 1.5 minutes).

3. Start adding sugar a little while continuing to beat. Beat for about ten minutes – the sugar should dissolve. When the whites have become glossy and stable (the foam is dense and does not drain from the whisks), carefully add the coconut flakes in parts, and mix with a spatula, without a mixer.

4. Form balls with wet palms and bake in a preheated 180-degree oven for 15-20 minutes.
