Warming onion soup: a classic French recipe
Onion soup is a classic first course in French cuisine. It used to be a staple for the poor, and now it is served even in the most expensive restaurants. If you cook it correctly, you can get an incredible gourmet dish.

Ingredients
- chicken meat
- butter - 80 g
- oil - 20 ml
- onion - 400 g
- shallots - 250 g
- white wine - 50 ml
- soy sauce - 50 ml
- salt
- dried rosemary - 1 tsp
- broth - 500 ml
- parmesan cheese - 60 g
- emmental - 150 g
- baguette - 3 pieces
- garlic - 1 clove
The method of preparation
1. Put the meat and onions in a saucepan, cover with water and cook the broth.
2. Fry all the onions in oil and butter until golden brown.
3. Add wine and evaporate for a minute. Add soy sauce and broth. Cook for a few minutes.
4. Add parmesan and salt to taste at the end.
5. Fry the baguette until crispy and rub with garlic.
6. Fill the plate with onion soup, sprinkle with grated cheese, lay out the baguette and make a cheese cap.
7. Bake at the maximum temperature until the cheese is golden brown.
