Warm pumpkin salad with herbs and delicious dressing: a recipe for a healthy autumn dish
Pumpkin is one of the healthiest and most delicious autumn vegetables, which can be the basis for making cereals, baked goods, pancakes, casseroles, salads, and even jam.
The cook shared a recipe for a very healthy and tasty pumpkin salad with carrots and spices on Instagram.
Ingredients:
- Pumpkin - 300 g
- Carrots - 1 pc.
- Bell pepper - 1-2 pcs.
- Oil - 2 pcs.
- Salt and pepper
- Provencal herbs
Sauce:
- Sunflower oil - 3 tbsp.
- Lemon juice - 1 tbsp.
- Honey (sugar) - 1 tsp.
- Salt to taste
- Ground dry garlic - 0.5 tsp
- Chickpeas (boiled) - 250 g
- Parsley
- Sesame seeds - 2 tsp
- Arugula and spinach
- Feta cheese - 70 g
Method of preparation:
1. Peel and chop the pumpkin, and put it on a baking sheet covered with parchment. Chop the carrots and peppers and add them to the pumpkin.
2. Drizzle the vegetables with oil, and salt and sprinkle with spices. Then put them in a preheated oven to 170 C for about 25-30 minutes.
3. Salad dressing: mix oil, a tablespoon of lemon juice, a teaspoon of honey, 1/2 tsp of dried garlic, and a little salt. Mix everything well.
4. Put the cooked vegetables on a plate, and add the boiled chickpeas. Add a small bunch of parsley, and 2 teaspoons of sesame seeds and pour the sauce. Mix everything well.
5. Put the arugula and spinach on a plate, and the salad itself, and top with the cheese.
