How to cook peas correctly

The classic method (with soaking). Rinse the peas several times under cold water until the water runs clear. Soak in water (for 8-10 hours or overnight). To speed up the process, you can pour boiling water over them for 1-2 hours. Drain the water and pour fresh water in a ratio of 1:3 (one part peas to three parts water). Bring to a boil, reduce heat, and cook:

  • whole – 1-1.5 hours
  • split peas – 45-60 minutes.

Do not salt immediately – add salt only at the end of cooking.

If you don't have time to soak, you can use this method:

Rinse the peas under running water. Cover with cold water (1:4) and bring to a boil. When the water boils, add a teaspoon of baking soda or pour in a glass of boiling water to help soften the peas. Cook over medium heat, skimming off the foam.

Cooking time without soaking:

  • split peas – 1-1.5 hours.
  • whole peas – up to 2 hours.

Additional ways to speed up cooking:

  • Use a pressure cooker to cook peas in just 20-30 minutes.
  • Adding baking soda – 0.5 teaspoon per liter of water will speed up softening.
  • Changing the water – after 30 minutes of cooking, drain the hot water and add boiling water.
