How to cook delicious khachapuri at home: perfect for a hearty and quick lunch

Khachapuri is a very simple and versatile dish that you can easily prepare at home. It is the perfect dish for lunch. While everything is baking, you can go about your business.

A simple idea for making a hearty khachapuri for lunch was published on the Instagram page of food blogger Yana with the nickname yanni.cooking. The technology is very basic.

Ingredients:

  • flour - 340 g
  • warm water - 100 ml.
  • warm milk - 100 ml.
  • dry yeast - 10 g
  • eggs - 1 pc.
  • salt - 0.5 tsp.
  • sugar - 0.5 tsp.
  • suluguni - 250 g
  • feta cheese - 150 g of feta cheese (you can also use feta cheese)
  • egg yolk - 1 pc.

Method of preparation:

1. Pour warm milk and water into a small bowl.

2. Add the sugar and dry yeast.

3. Let the mixture stand for 10 minutes until the yeast is activated.

4. Sift the flour into a large bowl and add salt. Combine with the activated yeast mixture and egg.

5. Knead a soft, non-sticky dough. Cover with a towel and leave in a warm place for an hour.

6. Grate 150 g of feta (or cheese) and 150 g of suluguni on a coarse grater. Grate another 100 g of suluguni separately for sprinkling on top.

7. After rising, crush the dough and divide it into two equal parts.

8. Roll out each part into a round layer 3-5 mm thick. Fill and roll.

9. Put the cheese mixture in the center of each dough circle. Gather the edges of the dough to the center, forming a pouch, and tightly close the seams (like a khinkali). Turn the seam side down and gently roll or press down with your hands to form a flat cake. If your layers were thicker than 3 mm, consider removing part of the tail (seam) before turning and rolling. This will reduce the compaction of the dough in the center of the khachapuri.

10. Make a small hole (3 cm in diameter) in the center of each cake.

11. Brush with egg yolk and sprinkle with the remaining suluguni.

12. Put the cakes on a baking sheet with parchment.

13. Bake the khachapuri in a preheated 210 degree oven for 8 minutes. Then increase the temperature to 220 degrees and bake for a few more minutes until an appetizing crust forms.
