Soybeans, wheat, water, and salt are combined to form a thick paste called "moromi." The resulting mixture is left to ferment in large wooden barrels, allowing natural yeast and bacteria to thrive and gradually transform the ingredients.
Over many months, and sometimes even years, the natural yeast and bacteria in the wood help the sauce ferment. Once fermentation is complete, the mixture is pressed to produce liquid soy sauce. The liquid is then filtered and pasteurized to ensure product quality.
