Boiled sausage is a very popular and budget-friendly product that almost everyone loves. But it is better not to buy it in the store, but to cook it yourself from fillets, adding spices, beet juice for color.

How to make sausage from chicken meat

The cook shared a recipe for a delicious and safe homemade boiled chicken sausage on Instagram.

Ingredients:

  • 500 g of chicken fillet + 3 drumsticks
  • 2 carrots
  • 2 onions
  • 1-2 cloves of garlic (optional)
  • 3 pcs. bay leaves + 10 pcs. peppercorns + salt
  • 1 boiled beetroot
  • 30 g of gelatin + 100 ml of broth
  • 300 ml of broth ⠀

Method of preparation:

1. Put chicken, carrots, onions, garlic, bay leaf, salt and pepper in a saucepan. Add water and bring to a boil. Reduce the heat to medium and remove the foam, cook for 1 hour.

2. Grate the beetroot and squeeze out the juice using cheesecloth or a sieve.

3. Strain the broth through a sieve. Pour 100 ml of the broth over the gelatin, stir and leave to swell for 15 minutes.

4. Remove the bones and skin from the meat and divide it into small pieces. Add the beet juice, melted gelatin in the microwave or on the stove, 300 ml of broth and blend thoroughly.

4. Use a bottle or glass container as a mold (be sure to grease it with vegetable oil). Put the mass into the mold, cover with foil and refrigerate for 3-5 hours, or preferably overnight.

5. Take the finished sausage out of the mold and slice!
