Ingredients:
- Butter - 180 g
- Salt - a pinch
- Sugar - 140 g
- Eggs - 2 eggs
- Cottage cheese 9% - 180 g
- Flour - 390 g
- Baking powder - 10 g
- Cinnamon - 3 g
- Dried ginger - 2 g
- Walnuts - 130 g
- Dried fruits - 300 g
- Orange juice - 1-2 oranges
- Cognac or rum - 40 g
- Powdered sugar - 60 g.
Method of preparation:
1. Rinse the dried fruit and pour it with orange juice and cognac. The liquid should completely cover the dried fruit. You can add a little water. Leave for an hour, but the longer the better.
2. Beat the butter at room temperature with the sugar and salt until fluffy white, about 6 minutes on high speed. Add the eggs and cottage cheese and beat until smooth.
3. Mix the flour and baking powder and gradually add to the dough. At this stage, knead it with a spatula. Add the ginger and cinnamon. Drain the dried fruit and add it to the dough. Pour in the nuts and mix thoroughly.
4. Grease the mold, pour the dough, and bake for 40-50 minutes at 180C.
When the cupcake has cooled, sprinkle with powdered sugar and decorate with berries and fruit!
