What long-livers from blue zones eat: these two dishes will surprise you
A short boat ride from the Italian coast is the magical island of Sardinia. Although the island is popular with tourists for its sun-drenched scenic spots, it is also becoming known for its 100-year-old residents.
Longevity researcher Dan Buettner visited the quaint mountain villages of Barbados on the island for his Netflix documentary, "Living to 100: Secrets of the Blue Zones," to uncover the secrets behind the locals' impressive lifespans. He was very surprised to find that the most popular foods among the long-livers were pasta and bread, writes Express.
"What really shocked me was the pasta and bread," he admitted. "Coming from America, I thought 'carbs are the enemy,' right? But it's all about how these simple carbohydrates are prepared."
Dan delved into how the islanders make sourdough bread, which is believed to lower cholesterol.
"Take sourdough bread, for example. When you make sourdough bread, the process is very different from baking regular white bread, because it is based on lactobacilli, which reduce the glycemic load of the whole food," he explained.
This means that this sourdough bread does indeed reduce sugar absorption, and this may explain why people have lower rates of diabetes and therefore live longer.
Regarding pasta, Dan found that the islanders add it to minestrone, often mixed with healthy beans and various vegetables.
The expert emphasized the health benefits of a fiber-rich diet, saying: "All ingredients contain a wide range of fiber, which keeps inflammation under control and strengthens your immune system."
