Vegetable stew is not only a light but also a very healthy dish that can be eaten every day. For a more hearty version, add chicken or shrimp.
A cook shared a recipe for a delicious and healthy vegetable stew with chicken on Instagram.
Ingredients:
- zucchini - 1 pc
- carrot - 1 pc
- onion - 1 pc
- garlic - 5 cloves
- eggplant - 1 pc
- sweet pepper - 1 pc
- fresh tomatoes or in their own juice - 400 g
- parsley
- basil
Method of preparation:
1. Cut the chicken and vegetables into medium-sized pieces. Grate the carrots on a coarse grater.
2. Fry the meat with salt, pepper and paprika for 5-7 minutes, stirring occasionally.
3. Put the chopped vegetables and tomatoes in the pan. You can use fresh ones. Add salt, pepper, paprika, thyme and water. Cook under the lid for 20 minutes. Add sugar and balsamic vinegar. Bring to a sweet and sour taste.
4. Add the chicken, mix, cook for another 5 minutes and add the herbs.
