Traditional Avdiivka porridge: an authentic recipe for a real gem of Ukraine's gastronomic heritage
The recipe for Avdiivka porridge was almost completely lost during the Soviet era. However, thanks to great efforts, it was restored and is now included in the list of intangible heritage of Ukraine.
Food expert Svitlana Levytska knows exactly how to cook Avdiivka porridge according to an authentic recipe. On Instagram, she said that the porridge is called "honorova" (noble, rich) because it is very hearty and the ingredients are quite expensive.
Ingredients
- round rice - 1 cup
- eggs - 10 pcs
- fatty milk or cream - 3 cups
- butter - 250 g
- sugar - 3 tbsp
- salt - 1 tsp
- raisins - for serving
Method of preparation.
1. Rinse the rice well and cook in boiling water for 2 minutes.
2. Drain the water and dry the cereal well on a paper towel.
3. Beat the eggs until smooth.
4. Add butter, sugar, and salt to milk. Then add rice and cook for 5 minutes.
5. Gradually pour in the eggs, stirring constantly. Bring to a boil, cover and wrap in a warm blanket. Leave for 2-3 hours.
6. Serve with pre-soaked dried fruits.
