Spanish pilaf with chicken and olives: a delicious dish for a hearty dinner
Pilaf is a very satisfying dish that everyone can cook. To prevent the rice from sticking together, rinse it until it runs clear, and add vegetables, olives, and spices for a bright flavor.
The cook shared a recipe for a delicious Spanish pilaf with vegetables, meat, and olives on Instagram.
Ingredients:
- 200-250g of rice (camolino is ideal)
- 3-4 chicken thighs
- 1 large onion
- 100 g of olives
- 200 g of cherry tomatoes
- garlic (fresh or dry)
- salt, pepper
- parsley
Method of preparation:
1. Remove the bone from the thighs and cut them into 2 parts. And fry in vegetable oil on 2 sides until crispy.
2. Fry the onion in the same skillet. Add olives and cherry tomatoes, salt, spices, and rice. Add water, as usual, 1:2 or a little more.
3. Then put the thighs on top of the rice. Salt and season them as well, cover, and simmer for 20 minutes until the rice is ready.
If the water has already evaporated and the rice is not ready, you can add a little more!
