More delicious than "Vinegret": a very healthy and tasty beetroot salad for every day
Beetroot is a very valuable and healthy vegetable that can be the basis for first courses, as well as appetizers and salads. Beets can also be added to canned foods, made into sauces, and added to dessert cream for a bright color.
The cook shared a recipe for a delicious and light beetroot salad with orange and cheese on Instagram.
Ingredients:
- arugula – 150-160 g
- orange – 1 large
- beets – 1-2 pcs
- feta – 120 g
- white and black sesame seeds and sunflower seeds
For the dressing:
- olive oil – 3-4 tbsp
- honey – 1 tbsp
- mustard – 1 tsp with a slide
- salt – 1/3 tsp
- lemon juice or wine vinegar – 1 tbsp
Method of preparation:
1. Boil the beets until tender, and cool to room temperature.
2. Wash the arugula, pat dry with a paper towel, and place on a plate. Put the quartered orange on top. Next layer the beetroot strips and top with the diced feta.
3. For the dressing: pour the oil into a bowl, add the mustard, honey, lemon juice, and salt. Mix everything and pour over the salad.
4. Fry the black and white sesame seeds and sunflower seeds in a frying pan for about a minute. Garnish the salad with the dressing.
