Lightly salted salmon for sandwiches and salads: how to salt it correctly
Red lightly salted fish is a very tasty and healthy product that can be the main ingredient for salads and snacks. It is very important to choose the right spices in the right proportions when salting.
The chef shared on Instagram a recipe for delicious lightly salted salmon with citrus zest and juice.
Tip: alcohol performs several functions at once: it enhances the taste of fish, preserves the shape and color of fish, and most importantly, kills pathogens inside the flesh, disinfecting red fish!
Ingredients:
- Salmon fillet 1-1.5 kg
- Coarse salt 4 tbsp
- Sugar 2 tbsp
- Orange zest 1 pc
- Lemon zest 1 pc
- Juice of one orange
- Cognac, whiskey, rum, vodka 2 tbsp
Method of preparation:
1. Mix salt, sugar and zest.
2. Sprinkle the fish with the spice mixture on both sides, pour the orange juice and cognac on top. Cover with cling film and leave for 24 hours.
3. Afterwards, rinse under running cold water to wash off the remaining salt and zest, the fish will absorb enough flavor in 24 hours.
4. Use paper towels to remove any residual moisture and store in the refrigerator in an airtight container.
