Lemon and poppy seed cake for tea: a recipe for the simplest pastries for the whole family
Homemade pies can be made with any dough, as well as with various sweet and savory fillings. For a bright flavor, it is better to add vanilla and citrus zest to the dough.
The cook shared a recipe for a delicious lemon-poppy seed pie on Instagram, which is very easy to prepare.
Ingredients:
- Warm butter 82.5% - 165 g
- Sugar - 125 g
- Eggs - 4 large
- Yogurt (or sour cream) - 4 tbsp
- Zest of 1 lemon and 1 orange (large)
- Juice of 1/2 lemon and 1/2 orange
- Salt - a pinch
- Baking powder - 3 tbsp
- Flour - 300-320 g
- Poppy seeds - 3-4 tbsp
For the glaze:
- Powdered sugar - 140 g
- Lemon juice - 45 ml
For the cake impregnation:
- Lemon juice - 50 ml
- Sugar - 75 g
Method of preparation:
1. Put the butter at room temperature in a deep bowl, add sugar, and start whisking, as soon as the butter becomes light, start adding 1 egg, whisking each time.
2. Add the zest of 1 orange and 1 lemon, the juice of half a lemon and half an orange, yogurt or sour cream (not fatty), salt, sifted flour, and baking powder, and mix until smooth. You can add poppy seeds if you like, then add them next.
3. Cover the mold with parchment, put the dough in, and put it in the oven to bake at 160-170 degrees for about 30-40 minutes, check for doneness with a toothpick, it should be dry.
4. Take out the finished cupcake, make many small punctures with a toothpick and immediately soak it. To do this, mix the lemon juice with sugar (if necessary, you can heat it a little to dissolve the sugar).
5. Let the cake cool slightly, then make the icing: mix the powdered sugar with lemon juice and pour it over the cake.
