Soy sauce is made from fermented soybeans, wheat, salt, and water. This condiment has a rather unusual fermentation process, during which soybeans are destroyed and wheat is endowed with special mold cultures. All this significantly enhances the flavor of the future soy sauce.

Soybeans, wheat, water, and salt are combined to form a thick paste called "moromi." The resulting mixture is left to ferment in large wooden barrels, allowing natural yeast and bacteria to thrive and gradually transform the ingredients.

Over many months, and sometimes even years, the natural yeast and bacteria in the wood help the sauce ferment. Once fermentation is complete, the mixture is pressed to produce liquid soy sauce. The liquid is then filtered and pasteurized to ensure product quality.
